Ingredients
- 1/2 cup barley
- 1 cup green mango, diced
- 1/4 cup onion, diced
- 1/4 cup dried shrimp (a few roughly chopped and a few left whole)
- 1/4 cup coriander leaves, chopped
Mint and yogurt dressing:
- 1/2 cup mint leaves
- 1/2 cup yogurt
- 1 inch piece of green chilli, deseeded
- 1 clove of garlic
- 2 tbsp lime or lemon juice
- 1/8 tsp cumin powder
- 1/8 tsp chilli powder
- Salt, to taste

Instructions
- Cook the barley according to packet instructions and drain in a colander. Hold the colander under running water and rinse the barley until the water runs clear. Set aside.
- Make the dressing: add mint leaves, garlic, chilli and 2 tsp of yogurt to a blender jar and blend until smooth. Stir in the rest of the yogurt, chilli powder, cumin powder, lime juice and salt. Taste and adjust seasoning. Refrigerate until ready to serve.
- Add barley, onion, dried shrimp, green mango and coriander leaves to a bowl. Add the dressing just before serving and toss together. Serve at room temperature.
