My solidly convincing arguments aside, this salad is so delicious and takes 15 mins from start (washing your lettuce) to finish (forking it into your mouth). 

And speaking of, I always seem to have a bunch of salad leaves in the fridge. As much as I’ve learnt along the way how to store them properly to extend their time, this recipe was born as a consequence of them oppressing me with the speed of their wilt. 

The dressing here is one that I make often: apple cider vinegar for acidity, shallots for their savoury freshness, raisins for sweetness, pepper for heat. I usually also add a squeeze of honey to the dressing, but here I’ve used it on the apples in the pan to caramelise them. Crumble over some feta to finish, and you’re good to go. This salad hits all the right notes.

CARAMELISED APPLE SALAD

Servings: 2 people

Ingredients

  • 1 large apple
  • 3 cups of lettuce, loosely packed
  • 1 ½ tablespoons honey
  • ¼ teaspoon salt
  • 30 grams feta cheese

Dressing:

  • 2 tablespoons raisins
  • 1 ½ tablespoons shallots, finely chopped
  • 1 ½ tablespoons apple cider vinegar
  • ¼ teaspoon pepper

Instructions

  • First make the dressing: stir all the ingredients. Taste and adjust. Let the raisins sit and plump up while you get on with the rest.
  • Chop the lettuce into bite-sized pieces.
  • Chop the apple into thin slices. Toss in the pan with honey, pepper, and salt. Cook over a medium heat to caramelise both sides. Remove and set aside.
  • To serve, place the lettuce on a plate and top with the apple slices. Dress the salad and crumble over the feta just before serving.

Notes

A leafy variety of lettuce works better than iceberg in this recipe.
