CARAMELISED APPLE SALAD

Ingredients

large apple

of lettuce, loosely packed

tablespoons
honey

salt

grams
feta cheese
Dressing:
2
tablespoons
raisins
1 ½
tablespoons
shallots, finely chopped
1 ½
tablespoons
apple cider vinegar
¼
teaspoon
pepper
Instructions
First make the dressing: stir all the ingredients. Taste and adjust. Let the raisins sit and plump up while you get on with the rest.
Chop the lettuce into bite-sized pieces.
Chop the apple into thin slices. Toss in the pan with honey, pepper, and salt. Cook over a medium heat to caramelise both sides. Remove and set aside.
To serve, place the lettuce on a plate and top with the apple slices. Dress the salad and crumble over the feta just before serving.
Notes
A leafy variety of lettuce works better than iceberg in this recipe.
