CARAMELISED APPLE SALAD

Servings: 2 people

Ingredients

  • 1 large apple
  • 3 cups of lettuce, loosely packed
  • 1 ½ tablespoons honey
  • ¼ teaspoon salt
  • 30 grams feta cheese

Dressing:

  • 2 tablespoons raisins
  • 1 ½ tablespoons shallots, finely chopped
  • 1 ½ tablespoons apple cider vinegar
  • ¼ teaspoon pepper

Instructions

  • First make the dressing: stir all the ingredients. Taste and adjust. Let the raisins sit and plump up while you get on with the rest.
  • Chop the lettuce into bite-sized pieces.
  • Chop the apple into thin slices. Toss in the pan with honey, pepper, and salt. Cook over a medium heat to caramelise both sides. Remove and set aside.
  • To serve, place the lettuce on a plate and top with the apple slices. Dress the salad and crumble over the feta just before serving.

Notes

A leafy variety of lettuce works better than iceberg in this recipe.
