And as if on cue, I’m back with another seasonal mango recipe at the tail-end of mango season, when all you see on grocery shelves are varieties that are too sour to eat or popular ones past their prime. Which admittedly, is kind of the whole point of this dish.

In an effort to prolong and optimise their availability, when I can only find mangoes that aren’t very good to eat as is, I cook with them. My logic is this: gorge on the good varieties when they’re at their prime; cook with the underwhelming season-ends.

This salsa is technically not cooked, but you get the flavour and brightness of the fruit with the help of the other ingredients. It’s your typical salsa–onions, chillies, tomato, coriander, garlic, and lemon juice–with the additional chopped mangoes.

The fish can be any firm white fish (I use Tilapia or Mahi mahi). Boneless, of course. I buy a fillet and slice them up into thin strips the size of my finger. Panko breadcrumbs give you a crispier exterior, which is an important factor to consider since they are not going in the deep-fryer. You want to maximise the crunch.

AIR FRYER PANKO FISH + MANGO SALSA

Servings: 2 people

Ingredients

  • 300 grams boneless white fish (I use Tilapia or Mahi Mahi)
  • 1-1 ½ cups panko breadcrumbs
  • ½ cup flour
  • 3 eggs
  • 2 tablespoons oil
  • Salt, to taste

Mango salsa:

  • 1 ripe mango, finely cubed
  • 2 tablespoons onions, finely chopped
  • 2 tablespoons tomato, finely chopped
  • 2 tablespoons coriander leaves, finely chopped
  • 1 green chilli, finely chopped
  • 1 garlic clove, minced
  • Lemon juice, to taste
  • Salt, to taste

Instructions

  • Preheat the air fryer to 180 C.
  • Prep: Slice the fish into strips. Add the flour to a plate and season with salt. Add the panko to another plate and season with salt. Whisk the eggs in a wide bowl and season with salt. Lightly coat the air fryer basket with oil.
  • Take a piece of fish and dust it in flour. Dunk in the egg, and then transfer to the panko. Press down until all sides are coated. Set aside. Repeat with the rest of the fish.
  • Place them without overlaps in the air fryer basket. Spray or use a brush to apply more oil on the fish.
  • Air fry for 10-15 mins or until browned and crispy. Serve immediately with the salsa.
