Spicy Sambal oelek chicken and mango salad 🥗 Sa Spicy Sambal oelek chicken and mango salad 🥗 Salads for dinner. I’m all for it. We’re not talking lettuce heavy, wimpy salads. We’re talking big, bulked up salads: seasonal fruit, meat, punchy dressing, the whole shebang. A lot of good things going on here: there’s the vinegary chilli kick from sambal oelek, sweetness from mangoes, saltiness from soy and fish sauce, freshness from cucumbers and herbs. The dressing (a riff on the Vietnamese classic, nước chấm) also has lime, jaggery and rice vinegar. A Vietnamese-Thai hybrid you could say. Recipe is linked

Whipped feta with za’atar toasted tomatoes | Che Whipped feta with za’atar toasted tomatoes | Cherry tomatoes are tossed with earthy za’atar and cumin seeds and roasted until they burst open. The juices that pool around them get caramelized, sticky and sweet. Make sure you scrape out and include all these bits stuck to the pan.

The whipped feta couldn’t be simpler: combine feta and yogurt and blend until smooth. The yogurt keeps things light and also contributes to that extra bit of acidity. Recipe is linked
Eggs with mushrooms & spinach + quick chilli butte Eggs with mushrooms & spinach + quick chilli butter | Baking eggs this way somehow seems to transcend the whole ‘eggs are breakfast’ mindset. Or so I’ve gathered from conversations. (We eat salads for breakfast. So I should be the last person you should talk to about this arbitrary distinction though.)

Cook the mushrooms and spinach until they completely dry out. Make divots and crack an egg into each. Cover and cook until the whites are just set if you like your yolks runny; longer if you like them firm. 

The chilli butter comes together in seconds and is the perfect condiment to top the eggs with. This ad hoc chilli oil/butter approach is so convenient for these quick meals. Recipe is linked
Sun-dried tomato and fresh paneer pasta 🍝 I kno Sun-dried tomato and fresh paneer pasta 🍝 I know what you’re thinking, and yes, you can totally use store-bought paneer or ricotta in this recipe. There’s no Parmesan here and paneer is the only cheese component in this dish. I am constantly on the lookout to sub out the more expensive variants for local options and this is such a great recipe in this regard. Recipe is linked

This means adding protein and vegetables into the mix, while also making sure it comes together really quickly and easily. Spiced lamb with pumpkin mash ~ you toss the lamb Spiced lamb with pumpkin mash ~ you toss the lamb with spices and dates (I went with my gut here and glad to say it delivered multifold - think sweetness with depth). The pumpkin gets roasted in the oven alongside. Both elements cook for about the same amount of time and the whole dish comes together very synchronously, especially considering the minimal effort that goes into it. Recipe is linked

Mushroom miso soup | I can’t stop buying mushroo Mushroom miso soup | I can’t stop buying mushrooms. No seriously, it’s a bit of a problem. I’ll have two punnets in the fridge, go shopping with a clear meal plan and a concise list, and end up driving back with two more punnets stashed in the bag. 800 grams to use up in 3 days before they go mouldy and oppress me with the speed of their wilt? Lighter Eton Mess | I used Thoothukudi macaroons i Lighter Eton Mess | I used Thoothukudi macaroons instead of meringue nests. I devised a plan to use frozen strawberries instead of fresh. I cooked the strawberries instead of just blitzing them and serving them with fresh bits. I used a base of cream + yogurt instead of just cream. Are we still calling this Eton mess? Yes.
