MEXICAN BEAN TOASTS

Mexican bean toasts aka molletes. Molletes are open-faced sandwiches with a bean mash, cheese, and a zingy pico de gallo for freshness and balance. They’re traditionally made with black beans but I’ve used kidney beans (rajma) here. The mash itself is pretty straight forward – sautéed onions and garlic, spices, and cooked beans. For some… Read more »

HUEVOS RANCHEROS WITH CHIPOTLE BUTTER

Writing out this recipe was not fun. There are four different components here and although the instructions under each read “add all the ingredients to a bowl and toss”, it required a bit of uncharacteristic patience on my part to type out. The irony, since the dish itself comes together so easily. Start with the… Read more »

WHIPPED FETA WITH ZA’ATAR ROASTED TOMATOES

Whipped cheeses seem to be all the rage these days – feta, goat’s cheese, you name it and someone’s whippin’ it. I did a whipped paneer version not so long ago that turned out great, so feta seemed the obvious next choice. I love its saline hit especially paired with sweet and tangy elements. We… Read more »

COLCANNON FRITTERS + BURST CHERRY TOMATOES

Colcannon—a St.Patrick’s day staple—is a traditional Irish dish of mashed potatoes cooked with cabbage or kale. I usually make fritters or potato pancakes if I have leftover mash knocking about the fridge. (Not that boiling potatoes is hard work; please just cook some if you don’t have leftovers.) And in my quest to jam vegetables… Read more »

SLOW-ROASTED TOMATOES

I grow tomatoes all year round in my little terrace garden – grape, cherry, heirloom, pear-shaped ones, black plum ones, I’ve tried the whole range. Although I do get a steady harvest all year round—owing to the soaring heat and humidity levels in Chennai—this time of year, in the months of March – June, I… Read more »

Stuffed banana peppers with tomato sauce

When I started blogging, I seriously had no idea what would come out of it. I just knew that I really liked to cook, especially for my husband who, as it turns out, solely blames me for his having gained 7 kilos within 6 months of our marriage! And if I got lost in the… Read more »

Spaghetti with roasted red pepper & cream sauce

Roasting peppers is something that we don’t do often enough. The tender smoky flesh inside all that charred blackness is the heart of this dish, literally and metaphorically speaking. This simple pasta dish has it all – it’s wholesome, not entirely different from what makes it comforting, and makes for a very fulfilling meal.

Mixed tomato salad with pesto

This recipe (and a blog update) has been long overdue. But I think I may have found the perfect way to end this lengthy hiatus – a quick and easy tomato salad with a vibrant pesto dressing. Just wanted to subtly also point out that ALL THE TOMATOES WERE GROWN IN MY GARDEN! All organic… Read more »

Couscous with roasted vegetables

Is it just me, or did you also think that Couscous was a grain? I remember reading somewhere a while ago that it was actually a pasta in a minuscule granular form, but it must’ve completely skipped my mind when I made it alongside some Spaghetti arrabiata for dinner last night. How very un-savvy of… Read more »
