CRISPY BAKED OKRA
 
 
Serves: 2-3
Ingredients
  • 350 grams okra, halved lengthwise
  • 2 tbsp gram flour
  • 2 tbsp corn flour
  • 1 tsp chilli powder
  • ¾ tsp cumin powder
  • ½ tsp garam masala
  • 4 cloves of garlic, minced
  • 1" piece of ginger minced
  • 2 tbsp vegetable oil
  • Yogurt (to make the batter)
  • Salt, to taste
Method
  1. Preheat oven to 200 C / 400 F and line a baking tray with parchment or aluminium foil.
  2. Halve the okra lengthwise and set aside.
  3. Add the gram flour, corn flour, chilli powder, cumin powder, garam masala, minced ginger and garlic, oil, and salt to a bowl. Whisk in enough yogurt to bring it to a thick batter consistency.
  4. Add the okra to the batter and use your hands to coat them evenly.
  5. Lay the okra on the baking tray in a single layer. Bake for 25 mins one the first side, then flip and bake again for 15-20 mins. Keep an eye on it after about 15 minutes to ensure that it doesn’t darken too quickly. Serve immediately.
